EXAMPLE of 1/2 COW Total Yield: Average Amount = 200 pounds
**The final bill is determined by your animal’s actual hanging weight. **

Your non-refundable deposit is required simply to reserve your meat selection.  You will receive the final bill prior to delivery.

Generally, Hanging Weight is 850 +/- pounds for a full cow, but truly every animal is different, some could weigh more and some less. We’re giving you our best estimates for you to plan. Hanging weight should be about 425 lbs for a half of a cow. After the butchering process and 14 days of dry aging you should receive approximately 200 to 220 lbs of cut/packaged beef. We have provided two different cut options (see below) for your convenience. If you prefer different cuts than the provided options, please just let us know. We will put you in contact directly with the butcher and he will do his best to deliver what you are requesting.

With your ground beef, you can choose to have it put in 1lb or 2lb  packages. You can also choose to turn some of your ground beef into pre-made patties. Patties are 1/3 lb and come with 3 patties to a package.

With the Custom Cut Option, we will you put you in contact with our butcher so you can work with them to get exactly what you want.

Animal Weight Terminology:
Live weight (or “on the hoof”) is how much a cow weighs when it’s alive and walking around. This includes meat, bones, blood, etc.

Hanging weight (or “on the rail”) is after the animal is slaughtered and all the unusable parts are removedl (like head, skin and hooves). Hanging weight includes bones and meat. Typically, the exact hanging wieght is about 60% of the live weight.

Boxed weight (or package weight) is the weight of all the packages of individual cuts of meat that you will put in the freezer. This is typically about 60% of the hanging weight.
