Serve up a Greek inspired meal that will make you say Opa!

Greek lamb kofta

Lamb kofta kebabs are one of the most popular dishes in Greece. You can find them served in almost every tavern and for good reason- they are DELICIOUS! You may not be able to jet off on a Greek getaway anytime soon, but we can help you serve up a delicious Greek inspired meal at home.

Skillman Farm Market and Butcher Shop’s head butcher, Doug Palmer, has yet to disappoint with his Sausage of the Week creations. This week, Doug has put together Greek Lamb Kofta’s. These house made sausages are made with ground lamb and Greek spices. Our Greek Lamb Koftas are being sold on a stick for $12.99/lb. These sticks will be packaged in paper wrap, and you can order by the piece.

So, just like the taverns in Greece, you can dish these lamb koftas up as an appetizer or as the main course, either way they are sure to delight the taste buds. We recommending cooking them on the grill, but if that is not an option you can always bake them in the oven.

Make a full Greek inspired meal by serving these lamb koftas over rice with a simple Greek salad and some Greek pita bread on the side. Finish the meal with a the perfect garnish – Greek yogurt sauce! Try our recipe below.

GREEK YOGURT SAUCE:

  • 1/2 cup plain nonfat Greek yogurt
  • 1 tablespoon finely chopped fresh mint
  • 1 teaspoon freshly squeezed lemon juice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon minced garlic
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon sea salt
  • 1/3 cup minced, peeled cucumber

Prepare the sauce:  In a small bowl, whisk together all sauce ingredients except the cucumber. Once the sauce has been well mixed stir in the cucumbers.  Cover and refrigerate your Greek yogurt sauce until ready to serve.
